I got the impression Jack was just being Jack. And then he realised it was Daleks, and he knew he couldn't save his loved ones from that. It's not that he's domesticated by Ianto. More than he loves Ianto, and Gwen, and Owen and Tosh, and he's just lost Owen and Tosh, and now he's about to lose Gwen and especially Ianto, and he doesn't even get to die with them. He knows he's about to lose everything again, and it hurts.
